I am a professional Italian chef with over 30 years of kitchen experience. I graduated from the School of Hospitality in Assisi, Italy, in 1998 and worked around Italy until 2011. I also spent one year in Spain and six months in Russia, broadening my perspective and techniques.

In 2013 I moved to Australia, where I have worked in several Italian restaurants and spent five years at Crown Casino. Today I channel this journey into refined, generous menus that celebrate seasonality, tradition, and flavor.

Paolo did a great job for our 80th birthday party. The pasta dish and panna cotta ranked as the best I have ever had and were beautifully presented. The main course was also excellent with a great Italian touch. We were visiting Perth so Paulo managed to work in a sparsely equipped kitchen in a holiday appartment without complaint. I wouldn't hesitate to engage Paulo again.

Chef Paolo came into our home like a long lost friend. He was friendly with us, our teens and happy to be around our dog. He created an attentive menu that took into account food allergies. I was sceptical that he could pull off a gluten and dairy free lava cake but it was incredible to watch the gooey chocolate flow and it was absolutely delicious! Chef Paolo created the perfect night out… at home.
